The picturesque, hospitable and cozy Karachay-Cherkessia is located in the west of the North Caucasus. The main dishes are shashlik, boiled chicken (cake), lamb shoulder (jau-orun), poultry (liverwort sausage), poultry stew (gedlibzhe). There are many variations of pilaf and meat, vegetable, fermented milk soups (shorp, upre, shchips, hinkel). The pride of the Karachai-Circassian cuisine is fresh and smoked Adyghe cheese, made according to unique recipes. Corn cakes (nartuk-chyrzhin), halva and khychins with minced meat, cheese, and potatoes have become widespread in the region.

In the south-west of the Kabardino-Balkarian Republic, there is the main symbol of the Caucasus - the sleeping stratovolcano Elbrus, the highest point of Russia and Europe (5642 m). Hingalysh semi-circular flatbreads have a delicate taste of pumpkin and ghee. A popular sweet is halva with raisins and nuts.

Composition of water in the springs: iodine 10 mg/l, bromine 31 mg/l, silicic acid 139 mg/l, orthoboric acid 189 mg/l. The temperature of the hot springs is very high, the water is slightly mineralized, an alkaline reaction occurs in it, and contains a large amount of silicic acid, all this gives it outstanding healing properties. Such water is forbidden to be taken orally, since it contains almost all the elements of the periodic table.

The liquid of the springs has anti-aging properties, increases the tone of the body, and has a beneficial effect on the immune system. There are practically no contraindications to taking baths, but it is still worth consulting with a specialist.

Human skin, bones, connective tissue, endocrine glands contain silicon. Water with silicic acid will have a beneficial effect not only on the condition of the skin and hair, but also rejuvenate the entire body as a whole. People with mild diabetes can also improve their health with thermal baths.

At the beginning of the year, Rostov officials predicted that this year 1.4 million tourists will visit the region. Of course, the year is not over yet, and it is too early to sum up the results. However, at the same time, the warm season has already left behind, and the majority of tourists have already visited the region.

However, an expert on territorial marketing Alexei Matveenko is sure that in winter the Rostov region is able to attract tourists. How the region can be of interest to guests and who should be counted on, he said in an interview with AiF-Rostov.

Sergey Khoroshavin, AiF-Rostov: Aleksey, another gastronomic festival "Cheese, Wine and Jazz" has just passed. There were many visitors. Is Rostov-on-Don really becoming a gastronomic capital or is it still just the first steps?

Alexey Matveenko: Probably, there is no such criterion, upon reaching which we can say - yes, Rostov already has this status. As with St. Petersburg, the moment when a general conviction appeared in the public consciousness that it was a cultural capital was not recorded, just at some point it became a widespread and well-known thesis that does not need to be specially proven somehow. So it is with us. How to determine? How to understand that everything, Rostov-on-Don has already become such a capital? Will we write on the fence, at the entrance to the city? In the vocabulary use of our Don opinion leaders, we are already a gastronomic capital. From the stands large and small, this wording also sounds. The tourism industry uses this formulation extensively in its work.

But the main thing is that these are not just words. Reality is behind them. Gastronomic routes, excursions, tastings, festivals - all this is there. The restaurant market is developing, federal projects, local ones, feeling this competition, come up with something of their own, all the time trying new formats. I have already said that when we first started talking about Rostov as the gastronomic capital of the South of Russia in 2013, the comments were, for the most part, either skeptical, or simply mocking. Now, six years later, we can state that the idea has taken root.

For our part, by the way, we are also working - the festival "Cheese, Wine and Jazz", as you have already noted, has really become popular. Winemakers and cheese makers come to us not only from Rostov, but also from all over the south of the country. By the way, the next one is expected on December 15th - I recommend not to miss it.

- That is, you can fix that changes in the right direction are taking place. But what should you do to build on your success?

- This identity must be broadcast at all levels. Including, of course, in the media, as, for example, you do. And, of course, it is necessary to familiarize guests of the city and region with wine and gastronomy as much as possible. It is necessary that the administrations strongly support public catering and local winemaking at all levels. In addition, gastronomic events should be added to the calendar of events. Finally, take away from Kazan the assigned status of leaders of gastro-tourism in Russia, transferring it to us, where it belongs. Rostov, by the way, has an excellent tourist sub-brand “City with taste”. It needs to be developed through events, ratings, routes, souvenirs.

- But the authorities seem to be working. Almost every week, the Don hosts various events aimed at attracting tourists. However, many of them, especially in areas, are clearly being carried out, as they say, for show. Maybe you should pay attention to quality, not quantity?
